Fall Recipe: Apple Pie Cookies


I have to be honest: I'm actually not a fan of apple pie. I don't know what it is... maybe it's the texture of the huge chunks of cooked apples. However, I do like the taste of apple pie, so when when I found a recipe for oatmeal apple pie cookies, I was sold.


And oh my god. They are GOOD! They taste exactly like apple pie, with a soft center reminiscent of apple pie filling, and the crunchy oat exterior of a pie crust.


The key is to chop up the apples in tiny pieces so that the flavor gets distributed all over the cookie. The moisture from the apple also gives the cookies a soft, chewy center, but not the "cooked apple" texture I'm not a fan of. I use a granny smith and any sweet red apple for a nice mix of flavors.


When you bake the cookies, make sure that they are slightly brown around the edge, but not all over so that they don't become too crunchy. Unless that's what you like of course!

Oatmeal Apple Pie Cookies

Serves: 18

Ingredients:
  • 2 small or 1 large apple
  • 1 cup flour + 2 tablespoons
  • 3 cups old fashioned rolled oats
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon apple pie spice
  • 1/4 teaspoon baking soda
  • 3/4 cup butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla

Instructions:
1. Preheat oven to 350 degrees Fahrenheit. Peel and dice the apple(s). Toss the diced apples with the 2 tablespoons of flour and set aside.
2. In a medium bowl, whisk together the remaining 1 cup of flour, oats, salt, cinnamon, apple pie spice, and baking soda.
3. In a large bowl, cream together butter and sugars. Mix in egg and vanilla. Add dry ingredients to wet ingredients and mix until combined. Stir in flour-coated apple pieces. Roll balls of cookie dough about the size of your palm and press onto a baking sheet covered with parchment paper.
4. Bake for 12-16 minutes until golden brown. Allow to cool for 10 minutes on the baking sheet, then carefully transfer to a cooling rack using a spatula. They will be very soft until cool, so be careful!
